Hey, the “Joint” isn’t just for the big folks, the kids enjoy it too! But, we have to admit that we probably enjoy seeing the little ones and their smiles more than they enjoy the attention that we show them. For instance, Kara wasn’t to keen on us interrupting her breakfast so that we could get a picture.

But that sure changed when her friend, Audrey, showed up!

A quick trip to the Lexington Farmers’ Market to visit the fellows at Three Toads Lily Farm, assured both budding ballerina’s that they were indeed stars in our eyes!
But, not all of our young patrons come dressed ready for their ballet class. Some just come and smile and dazzle us with their big blue eyes like Asher.

Yup, our “big people” counter stools can sure accomodate those little butts too! lol

Yes, the scene is definitely changing in downtown Lexington. We watched as the demolition crew turned Joe Rosenberg’s into a pile of rubble.
Our “grill man” Drew had to look at that corner with some mixed feelings. He and his wife, Karin, had set up their Herb’n Renewal booth at the Lexington Farmers’ Market on that corner for 11 years. But he realizes that things move on and so does our wonderful and lively downtown!
The ”hard hat” crew has immortilized their hats by hanging them on the wall of insanity! Now you’ll see Robin and Shawnee wearing their “caution” tape! Ya just never know what these crazy gals are gonna do!

It’s a matter of change…it is going to happen and we might as well make the best of it.
Caros and the “crew” continue to strive to keep the “joint” the best little one downtown. It’s a fun place to get some great food and watch the “happenings” going on across the street.
Don’t forget that Caros is now open on Saturday from 7 until 2 for breakfast and lunch. It’s a great place to eat before or after shopping at the Lexington Farmers’ Market. And, you can find the Herb’n Renewal goodies inside on Saturday too!

Oh my, the dust is sure flying downtown! What a surprise we had when we got to Caros this morning…no more Joe Rosenberg storefront! Mia’s is almost gone and we think Buster’s will be history in the next few days. The view out our front window sure has changed quickly.
The good thing…Caros is still open for business as usual! In fact, we have a front row seat to the excitement without having to eat the dust! You can come in and enjoy a great breakfast or lunch and watch as the demolition crew does their job. It’s exciting and sad at the same time. Folks have been sharing stories about the “block” all day. Come on in and share yours too cause we are open for business no matter what is happening across the street!

After all of the upgrades with the electric, plumbing and equipment that left only one thing…decorating! We’re doing Caros on a budget, frugal and recycled you might say. But we hope everyone has fun with our ideas. There was only one wall left and we had run out of ideas. Then a friend suggested that we use it to have out of towners sign it!!!! Well, we’re happy to announce that the “signature wall” at Caros has been signed by not only one person, but four on our very first day!
Our very first “out of towner” was a couple from San Fransisco. It just proves that folks search out the local spots to eat, meet and learn about a community from all of the local diners! Our next couple included someone from across the pond..England! Sorry we didn’t get a photo of that signature but it appears the batteries in the camera decided to take a hike.

So, if you have visitors from out of state bring them in, enjoy some local fare, gossip and make sure they sign our “signature wall!”

Whew, that was a long four days for us. We’ve been upgrading the electric, adding a new grill, painting the walls and adding a few new decorative touches.
We know you will enjoy what comes off of the new grill. And, we’re hoping that you get a kick out of the newly decorated stools! We call them frugal and fun!

And, remember that old menu board that was so difficult for some to read? Well, it’s been replaced with a bright new one!

Drew was thrilled with Robin’s idea to use the crew’s hard hats as a wall decoration…it means he doesn’t have to wear that hot thing anymore! lol

We thank you all so much for your patience while we were closed and hope you stop by and enjoy something off of the grill while sitting on the “new” stools and giggling at our decorations.

But, don’t panic…it’s only for a few days so that we can do a bit of renovation. Whew, had ya scared didn’t I!
The building that Caros is in has been around for some time and it just needs a bit of updating. We figured with the demolition across the street going on, that it was the best time to give Caros some upgrades so that we can serve you better.
We will be closing at 2:00pm on Friday, August 8th and hopefully we’ll be ready to open again on Tuesday, August 12th at 7:00am. We’re sorry for the inconvenience but it’s only for a few days.
We’ll see you on Tuesday!
P.S. Mrs. Drew will still have her Herb’n Renewal goodies set up on Saturday even though she’ll have to work around the construction!

Of course you have to have a wee bit of ketchup and a cool drink to wash them down with! After a walk through the Lexington Farmers’ Market and a stop at the ballon man for a creation, it’s time to head to Caros for lunch. So what if that means only fries and pickles! Miss Audrey and her dad, Chris sure enjoy them.

And, what’s the best way to say “thank you for my lunch?” You show us all how to enjoy a fry! lol

Saturday’s at Caros are for the whole family even if you only want fries and pickles!

The CentrePointe developement is getting closer each day. We all watched while one of Lexington’s downtown landmarks came one step closer to being history. When we tell folks where on So. Upper St. we are located, we always say “across from Joe Rosenberg’s and they know exactly what we are talking about. Wonder if folks will find “Joe’s corner” without the nostalgic sign? It all started when we noticed trucks pulling up and parking in front of joe’s.

We watched as the first section of the landmark sign came down.
The “Hard Hat” crew made sure we were all in proper attire as we said goodbye to “Joe!”

Not to worry, a reliable source tells us that “Joe” will continue to do business in downtown Lexington…he just won’t be across the street from Caros…at least for the time being. Rumor has it that “Joe” will be back at CentrePointe once the construction is complete. Unfortunatley for us we won’t be able to use that sign as a landmark. But, we hope that everyone knows where the “Best Little Joint Downtown” is by now!
Saturday’s are starting to be very busy days for us! Not only do the farmers at the Lexington Farmers’ Market come and enjoy a bit of cool air while they eat but the customers alike are enjoying our Saturday hours. Heck, even out of towners come back for more…this conference group was here last Saturday from all over the United States!

Saturday also brings “Mrs. Drew” to town so that she can set up the Herb’n Renewal booth for the day. And, seen as how this is the first Saturday of the month she’ll have their wonderful Herb’n Benedictine available!
Come join us this Saturday and shop at Herb’n Renewal, cool off and enjoy a great meal all under the same roof…that is still located across the street from Joe Rosenberg’s even though they no longer have a sign!
